Ingredients:



Collard Green Pesto:

1 cup cooked collard greens
1 garlic clove
1 cup Parmesan Cheese (ground)
1 cup extra virgin olive oil
Red Pepper flakes to taste

 

Combine everything except oil in a food processor and drizzle in olive oil slowly. Season with salt to taste.
 

Fried Oysters:
6 Shucked Oysters
1 cup all purpose flour
1/2 cup corn meal

 

Toss oysters in flour and cornmeal mixture. Fry to golden brown. Serve with collard green pesto and shaved parmesan cheese.
